I'm a fat geek!
A little back story. A little over 2 years ago my mother in law moved in with us after facing some financial hardships. She stayed for almost 3 months and suffered a stroke and had to move in with my father in law (we live outside her insurance coverage area so she needed to be closer to the docs or i would have been her caregiver) While she was living with me, she expressed a desire to make cheese. She said it was one of the things she wanted to do before she died. Well too late. On Monday she passed away after a massive stroke last week. I thought it would be a nice tribute to make a batch of cheese for her memorial next month sometime. i just don't know where to start. I have made paneer (Indian fresh cheese) but was thinking of some sort of fresh mozzarella or some sort of cheese that doesn't need aging. Anyone have a favorite recipe? Cheese was her all time favorite food and she attributed it being born in the year of the rat.
