I absolutely hate this kind of soup..lol..but a few years back I worked at Lohn John Silvers and one winter we had it. I got it in my head that I would try it..of course I hated it on it's own..but I added some salsa to it..and OMG..I absolutely love it.

So fastforward to today. I've been craving that taste for about 2 weeks. I just made this recipe and O.M.G So good.


2 Tbsp. butter or margarine
1/4 cup chopped onion
2 Tbsp. flour
2-1/2 cups milk
3/4 lb. (12 oz.) VELVEETA Pasteurized Prepared Cheese Product, cut up
1 pkg. (10 oz.) frozen chopped broccoli, thawed, drained
1/8 tsp. pepper

MELT butter in large saucepan on medium heat. Add onion; cook and stir 5 minutes or until onion is tender. Add flour; cook 1 minute or until bubbly, stirring constantly.
STIR in milk. Bring to boil. Reduce heat to medium-low; simmer 1 minute.
ADD remaining ingredients. Cook until VELVEETA is melted and soup is heated through, stirring occasionally.

My changes:

I bought a package of steam in the bag broccoli and cooked it and pureed it before adding it to the soup..there's no way I could handle big chunks of broccoli and I had read an amendment to the recipe that suggested steaming it first..so unless you want it crunchy..I'd steam it!


I added about 1/2 cup of chicken broth to thin it out..I also added more black pepper and a little bit of garlic powder and for the best part..I added some salsa from Taco Bueno..if you guys don't have a taco bueno..I'm so sorry!
