I'm attempting to cook korma for the first time today. I just finished the first phase: combining almonds, raisins, cinnamon, cardamom, corriander, black and red pepper, and melted butter to make a marinade for 2 lbs of stew beef. (It was supposed to be lamb but wow lamb is really expensive and looked like it would be a pain in the butt to get off the bones.)

Next step: frying an onion in butter, then adding the meat and frying it all together. Also making a box of rice.

Final step: Blending mango, cream, and coconut in with the onion and meat and salting to taste, then serving over the rice.
