Most people know I am a seafood fanatic, especially lobster. However, there is something that drives me even wilder.

It's the golden brown crispy skin on a roasted chicken, turkey or duck. The crispy fatty edges of a medium rare steak. The delectible crispy pieces of pig skin that are the best part of a pig roast.

It's cracklins, greben* (or grebenes), even pork rinds if I'm desperate.

These are the things that make me swoon. These are the prime bits of a meal, the nuggets that make life worth living.

They make me happy.

Anyone else have a thing for crispy skin and its relatives?
