I thought about this all weekend. I think its still too early to jump into main dishes, but seeing how its the BBQ season I decided to post my Mama's recipe for Texas Style Cole Slaw. Its a Non-Mayo/Non-Creamy style.
Texas Style Cole Slaw
Ingredients:
6 cups green cabbage, shredded
1 large green bell pepper, chopped
1/2 cup fresh coriander (cilantro), chopped
1-2 large cloves garlic, minced
1 medium onion, chopped
1 cup olive or vegetable oil
1/2 cup red wine vinegar
1 tsp. sugar
salt and pepper, to taste
Mix dressing well before adding to slaw. To add a little kick, add 1 jalapeno pepper, chopped.
