Grilled Cheese Sandwiches

I went to the grocery yesterday (while I was hungry -- BIG mistake)...anyway, I decided I wanted to make some grilled cheese sandwiches, but haven't made them in years...so, I'm not sure if there's a type of cheese that works best, if I should use butter or cooking spray, etc.

I did buy white bread, so I hope that's a step in the right direction.


Anyone an expert of the fine art of making these types?
