It is still almost 100 degrees here in the south. I like to pretend we actually have more than two seasons (humid and hot, and not so hot), and dig out the family recipes that remind me of fall. My Grandmother had a row of apple trees at the back of her property that separated the yard from the garden. Every year around this time she would make apple cake (and many many other things with apple, according to my mother and her siblings, they still tell the stories about having to peel apples for days and days...)

I inherited my Grandmother's recipe box. When I look through her recipes, and through old cookbooks you can really tell how everyday cooking has changed. Below is her apple cake recipe.

APPLE CAKE

2 cups sugar
3 cups flour
3tsp baking powder
pinch of salt

Put all in a bowl, mix well then add

1 cup oil
4 eggs
1/4 cup orange juice
2 1/2 tsp vanilla

Beat until well blended. Batter will be thick (this is underlined)

Grease and flour a tube pan (the kind that the bottom of the pan comes out)

Apple Layer

5 or 6 apples peeled and sliced thin - Granny Smith (small ones)
5 TBS sugar
2 Tsp Cinnamon
toss apples, and sugar, and cinnamon until apples are coated


In the tube plan put in a layer of batter (through trial and error, I use a spatula and ribbon the patter in, when it says it is thick, it is really thick) then a layer of apples, alternate, ending with the batter on top

Bake at 350 degrees for 1 and 1/4 hour

While cake is still warm, glaze if desired

Glaze

1/2 cup 4x sugar, and a little orange juice


I sometimes vary from this recipe and add chopped walnuts to the apple layer, or sometimes raisins that have been soaked in orange juice. It is absolutely wonderful in all of the variations. Very good toasted in a toaster oven served with a little butter for breakfast.
