The past few years, most people on my gift list have been getting homemade gifts, tailored to their likes and preferences. Some get bath and body stuff, some get jewelry, some get food treats.

This year I am making rum balls and I need to come up with another candy type treat without alcohol for those who do not indulge in spirits. But yeah, I made the batch of rum balls last night to put away in the fridge so the flavors can meld and they can get all gooey and yummy.

The recipe I use is very simple:
8.5 ounces vanilla wafer crumbs
1 pound shelled walnuts, ground to fine crumb
1/3 cup honey
1/2 cup dark rum.
Mix dry ingredients and then mix wet ingredients and then mix the two until thoroughly combined. Put in fridge for a half hour and then roll into marble sized balls, and then put in an airtight container in the fridge for at least a week. Then before serving or giving, re-roll in powdered sugar and pack in wax paper lined tin or Chinese food style takeaway box, etc... Will keep for a month if refrigerated.

You can substitute chocolate wafers or ginger snaps for the vanilla wafers, and you can substitute pecans for the walnuts, and you can substitute spiced rum or bourbon for the dark rum. You can also add chopped dates or raisins if you wish. Pretty much you can do whatever you want with it. Mix cocoa with the powdered sugar to roll them in or add some ground spices to the sugar. The recipe is pretty forgiving and customizeable.

I've already been into the ones I made last night, they are good even now. Can't wait to taste them in a week or two. Gonna leave them alone until then too!
