I took the day off today (didn't want to deal with icy, sleety, snowy weather) and used it as an excuse to bake!

I made Swedish Ginger Bacon Cookies (it's a recipe from From the New York Times magazine which took it from The Trinity Episcopal Church Recipe Book 1982) Here is a link to a site that has the recipe. And yeah, it uses bacon fat instead of butter. :shocked:

They came out...interesting. lol. I added candied ginger bits to the recipe.

I also made a coconut pound cake from a recipe in Gourmet Magazine. I think I love pound cake! It came out great.

I didn't take pics since they weren't very photo-worthy. The pound cake looks just like the yummy eggnog pound cake from Christmastime. And the cookies looked really boring!

Anyone gonna bake this weekend?
