During my shopping on Saturday, I spied a veal roast. The carnivore in me reared back and roared. So I bought the roast, and used this recipe today:
Veal Daube
1. Mix 1 tblspn bacon drippings with 1/4 teas. red pepper and 1 clove garlic (minced) and rub into roast.
2. Combine 1 teas salt, 1/4 teas black pepper, 1/8 teas mace, 1/8 teas. ground cloves, 1/4 teas. allspice; and sprinkle onto roast.
3. Mix 1/4 teas. thyme, 1/4 teas. sage, 2 bay leaves (crushed) and 1/4 cup flour. Rub into roast.
4. Brown (sear) the roast in 2 tbl. bacon drippings. Remove roast.
5. Prepare: 1 onion, chopped. 4 carrots, sliced. 2 turnips, diced. Brown the veggie mixture in the same pan. Add roast.
6. Cover and simmer until tender 2 to 2 1/2 hours.
