On the cellular level, DNA occasionally mutates by changing in very minute ways that can present a drastic physical change in the organism. If the creature survives, perhaps because this previously unseen change is a significant survival advantage, it gets the opportunity to breed and and pass this trait on, perhaps advancing the species or giving rise to a new species altogether. Only by taking risks and deviating from what is considered normal does life get a chance to become something greater. This seems to be random, but perhaps God has a hand in it as well (I'm not trying to appease both creationists and evolutionists, just presenting a theory).
I have a theory that this is occuring on more than just a cellular and physical level. I think that attraction to fat partners, homosexuality, and other forms of sexual expression that some consider deviant is meant to serve some higher purpose. I think nature is experimenting with more than our bodies, but with our minds and souls as well. If a small portion of us are driven to mate with those outside of the norm, perhaps our offspring will develop a trait that can help the species as a whole advance. Even when there are no children as a result (such as homosexuality) I believe some good comes to the world from the love and the bond shared.
