No, not the dessert Arroz con Leche.
I'm talking about a side dish served with anything mexican, similar to spanish rice.. without the heat or spice. I've had it at fresh mex fast food places, and have been trying to duplicate it with disappointing results.
This is my latest try, and I think I used too much sugar.. and its missing something.
1/2 medium yellow onion, chopped fine
1 clove garlic, minced
2 tablespoons oil
1 cup long grain white rice
2 cups chicken broth
3 tablespoons white sugar
In a sauce pan, saute the onion and garlic in the oil over medium high heat about 2 minutes.
Add the rice and mix until well coated and slightly dry.
Dissove sugar in chicken broth. And add to the rice.
Bring to a boil, reduce heat and simmer 20-25 minutes.
Fluff.
