I was back at the recipe box this afternoon, and stumbled on a recipe I have not made in years. It is truly divine. The icing is very different, I guess it is most like a Red Velvet cake icing (not the cream cheese kind)

Oh That Icing
This is made in two stages, first you make a cream sauce

2tbs oleo (yeah it is an old recipe)
2 1/2 tbs flour
1/2 cup milk

Make a thick cream sauce and cool (yup that was all the guidance G-mom gave)

Cream together
1/2 cup oleo
1 Tsp Vanilla
1/2 cup sugar (granulated)

Add cream sauce by the spoon full and beat on high at least 10 minutes until the sugar has dissolved.

Coal Miners Cake
13X9 Pan 350 degrees for 25-30 minutes

Cream
1/2 cup oleo
2 eggs
1 1/2 cup sugar
1 tsp vanilla

Sift
2/1/2 cups flour
1/2 cup cocoa
2 tsp baking powder
2 tsp baking soda
Add alternately with 1 cup sour milk
Beat Thoroughly
Add 1 cup boiling water by hand


(I had to look up how to make sour milk - one cup of regular milk (minus one tablespoon, replace the tablespoon of milk with vinegar or lemon juice, let stand 5 minutes. Some people say you can sub buttermilk, but I don't know the results)
