I require from the masses a consensus on the modern surge on Phở!
I speak, of course, of the ever-versatile, supremely-inexpensive, meat-stocked, Vietnamese-loved, rice-noodle soup.
In my area of residence, near the University of Washington, approximately 4 Phở dedicated restaurants have sprung up within the past 5 years.
Elsewhere throughout the city I see a remarkable recurrence of this pattern - This food must be quite popular, and business must be good!
Is it so prevalent elsewhere?
What do you think of this oft dubious-looking soup?
