For general snacking, I prefer potato chips over tortilla chips. About the only time I buy tortilla chips is when I make guacamole, where I need a more substantial digging chip.
What happens is that I frequently have on hand partially-consumed bags of chips that go uneaten. I think I currently have four different bags in the house. I hate to be wasteful so I was wondering if any of y'all had some good recipes that didn't call for perfectly fresh tortilla chips. I'm thinking that some sort of Mexican casserole, something that might have cream-of-something soup as an ingredient, would be a good way to use the remainder of the chips. I figure that the chips, no matter what degree of freshness, would only end up soaking up the liquid anyway, so crispiness wouldn't be a factor. I've never made this sort of dish, so I'm asking here.
