Side dishes

I looked and couldn't find a thread. I need some creative side dishes.

The problem: Rob is uber picky and doesn't liked cooked vegetables. Me..I could eat them until the cows come home..but don't need to cook a lot because I hate leftovers.

Anyone have any go to dishes?
