[Note - I'm new to writing but good with diary format so I'll give it a bash]

My love, Jackie, has finally give up her calorie wasting job. At 550lbs she began to struggle with everything so she given up and wants me to care for her forever. Lucky my business is finally finished, I have enough stock and money to make sure I can feed my darling all the food in the world and treat her like a goddess and never have to work again. At only 28, thats impressive. Jackie's turned 25 on the first and we celebrated by having a massive feeding day, I order and cooked so much food whilst she, naked and slopped on the couch ate and ate. It went on from 7am till 11pm and by that time, she was about to pop. I rubbed her stomach as she moaned and hiccuped. but by 1am, she was back to saying "Honey, I'm starving" and "can you go get me some MacDonalds". The work to the house to accommodate Jackie's massive size is continuing. The bathroom is know done, the toilet seat can now hold 1000lbs and is as wide as 2 chairs. She loves it. and the Jacuzzi really gives her a good clean and there plenty of space for her to grow and space around it for me to clean and feed her. The bedroom is almost done but the new bed needs to get here fast, I don't know how long the old one can hold, It creaks louder and falls lower every day. Jackie started to take up sowing so she can make herself bigger clothes. Its harder to shop for her clothes due to her increasing size and a lot of fabrics are impossible for her to wear. Basically it has to be elastic or it will rip and even the elastic rips. We hopefully find a solution.
