Or maybe it should be revelation. Anyway, I was raised on Quaker oats -- you know, what they call rolled oats -- and I never thought of oatmeal as a particularly exciting food. Quite the opposite. But yesterday at the health food store I bought some steel-cut oats, and today I made oatmeal from them, just as an experiment. It was great! It didn't have the sort of slimy texture of rolled oats, and it had a nutty flavor I really liked. The only problem is that you have to cook it for about half an hour instead of five minutes. On the other hand, it's worth getting up a little earlier for.
