In Rememberance
OK- folks. Do you have a favorite recipe that's been handed down in your family from generation to generation? If so, share it.
This is the recipe for my father's favorite cake. AS far as I know, his mother's oldest sister created this recipe, and it's over 80 years old.
It's called "Lightning Cake". Because it looks like lightning hit it. But it's DEE-LICIOUS!!! I've only had it a few times; it's a little tough to make. But worth the effort.
Let me know if you try it.

LIGHTNING CAKE
1/2 cup butter
1/2 cup sugar
4 egg yolks
1/2 tps salt
2 tsp baking powder
1 cup flour
5 tbsp milk
1 tsp vanilla
Cream together sugar and butter. Add egg yolks one at a time. Add sifted dry ingredients with milk. Add vanilla. Pour into two 8- or 9-inch pans. Spread meringue over both cakes. Bake at 325 deg for 40 minutes.
MERINGUE
4 egg whites
1/2 tsp salt
1/4 tsp baking powder (cut in half for high altitude)
1 cup sugar
Beat whites until stiff with salt and baking powder. Add sugar - beat. Spread on both cakes - add chopped nuts on both cakes. Bake as stated above.
CUSTARD
2 egg yolks
3 tbsp sugar
2 tbsp flour
1 tsp vanilla
1 cup milk
Put all in bowl except vanilla. Beat for two minutes. Cook over double boiler until thick and creamy. Allow to cool - add vanilla. Spread between layers of baked and cooled cake. Add banana slices on top of custard filling only. Put cake together so they layers will be (from bottom to top) cake - meringue - custard - bananas - cake - meringue Put into refrigerator to cool.
NOTE: The top layer of this cake tends to slide, because of the bananas and custard. If you can get a bamboo skewer and put it right through the middle, it will help it not to slide while cooling, But once you start cutting it, expect it to slide. That's why it's called "Lightning Cake" - it looks like it was hit by lightning.
