I confess -- I'm one of those grown-ups who hates my vegetables. But in an effort to be a bit more health-conscious, I am trying to learn how to eat them. So far, I have had some success with these solutions:

1)Prepackaged salad mixes (yeah, I know -- but it is just not likely that I will ever be the kind of woman who tosses her own salads with veggies stored in the crisper)

2)Steamed asparagus with a little vinaigrette

3)mixing corn into pasta dishes, etc.

4)Indian food from Trader Joe's like spinach paneer -- the only problem is, I'm not sure how many nutrients these packaged entrees really contain.

This is sort of all I have at the moment.

I need help. Please tell me how to incorporate vegetables into my diet with a minimum of fuss. I have no aversion to canned or prepackaged fare -- I'm just trying to get them veggies down my gullet on a regular basis, and hopefully in a way I can find *somewhat* tasty.
