Actually, I've thought alot about getting into the restaurant business. I mostly get stuck on thinking about where am I going to get all the $$$ to start it up, and less on food permits, staff, and location.
And we all know how important location can be.
My thoughts center around a 1920s-themed restaurant idea. Depression/Prohibition Era, with most of the restaurant underground, or in a basement level, wait-staff dressed as gangsters. Windows are blacked out, barrels of "illegal" hooch and beer are stacked against the walls, dining area mostly dark with single bulb lanterns for each table. Music of the era is piped in (Swing and jazz) or even a local jazz trio on weekends.
Food would be the usual steak grill and oyster bar fare, with blue plate specials like hot roasted turkey over toast with taters and vegetable of the day.
