Tomorrow it is going to be around 100 degrees and we are going to a picnic with hardly any trees in the middle of the afternoon for a company wide picnic. There will be about 250 ppl there and we need to make two dishes to feed 10-12 ppl each.
I *still* have no idea what to bring. We don't need any meat..it is being provided by the company. No desserts either as that is what most people signed up to bring. Also off the option list are coleslaw, potato salad and green beans...it is amazing how many people signed up for those three dishes.
We would like to make a couple of vegetarian main/side dishes because the boy is completely vegetarian and I would like something for him to eat unlike our last picnic event where he ate a bun with the dressings and no meat and chips.
Any ideas from the culinary geniuses here? Here are the guidelines - something that won't spoil if set out for a while. Will be under the pavilion, but will probably still be pretty hot. Something that has no meat. Something that can be easily served and shared. Not a dessert. Easy for you guys...right??
