I absolutely love goat cheese, as my 4 year old does as well. It's soooo creamy!! I love it on everything, pasta, pizza, sandwiches...and I just found this cupcake icing...yes with goat cheese!!!!
Goat Cheese & Honey Frosting
3 oz goat cheese, at room temp
1 T unsalted butter, at room temp
1 1/2 T honey
Put everything in a bowl & beat with a mixer until smooth & creamy.
Frosts 4 cupcakes.
