Need of SIMPLE Crock Pot recipe for Christmas Eve gathering!

Hey all!
Okay, the family is once again coming here on Christmas Eve and I need a SIMPLE recipe for the crock pot. I also have to sing at Midnight Mass and don't want to spend all day in the kitchen and all night cleaning up.

I have done Chili in the past......but there are some that don't like Chili!
